Chef Roberto Marotta has over two decades of experience in restaurants from Europe to North America. In his native Milazzo, a port town on the northeast coast of Sicily, Roberto opened his first restaurant and filled it with familial flavours. After moving to Toronto, he helmed the kitchens at some of the city’s finest Italian establishments—infusing the taste of Sicily’s rich history into each new dish he created. With DOVA, Roberto explored Sicilian and Mediterranean flavours through modern techniques and seasonal ingredients.
We pay homage to Sicily’s exciting terroir and culinary traditions—though we traverse other regions in the Mediterranean basin. Handmade artisanal pastas, fresh-caught fish and ethically sourced meats are the foundations for our cuisine.
